Maillard-Reaktion   Maillard reaction Reaction of reducing sugars with amino groups (of amino acids, etc.): browning reaction. Damages nutrient media during sterilization.
Maisch m; -es; -e Mash tub  
Maische f; -; -n Mash Typically, the slurry of corn, malted barley, etc., to be fermented.
Maiskolben   Corn cobs Only cobs in this context; some dictionaries list ‘corn on the cob’ (US food), or ‘ear corn’, meaning corn that has been harvested and is still on the cob, before ‘shelling’.
Maismehl   Corn meal(or cornmeal)  
Maisquellwasser   Corn steep liquor Waste from producing corn starch; common component of industrial microbial growth media

Mass n,  -es,  -e Weight or mass, or a measure. English often uses ‘weight’ where German has ‘mass’, especially in ‘molecular weight’.

Maul- und Klauenseuche   Hoof and Mouth Disease Also foot and mouth disease
Melasse   Blackstrap Molasses residue from sugar production
Melasse   Molasses Residue from producing sucrose from sugar cane or sugar beets; may also be used for residue from producing glucose from corn (maize) syrup. A cheap source of carbohydrate for fermentations.

membran-gebunden   Membrane-bound Usually refers to enzymes which are found in mitochondrial membranes of higher organisms and in cell membranes of bacteria.

MF   MF Membrane filter; Millipore Filter (tradename)
Michaelis-Menten-Konstant n Michaelis-Menten constant; Km Relates biochemical reaction rate to substrate concentration; often called just ‘Michaelis constant’. Equal to the substrate concentration at half the maximum rate.
mikroaerophil adj Microaerophilic Use oxygen, but at lower concentration than in air

Mikrophotographie   Photomicrography Photomicrography: Making pictures of small things Microphotography: Making very small pictures (e. g., microdots)
